Outlaw Smoked Potatoes

Ingredients:
4-6 Potatoes (baking)
Olive or Vegetable oil
Salt (Kosher or Sea Salt)
Black Pepper
Garlic Powder
Paprika
 

Recommended wood:
Pecan 

Directions:
Wash and slice the potatoes into 1/2 inch thick slices.
Spread the slices out on a cookie sheet
.
Rub or spray a light coat of oil on both sides of the potatoes.
Lightly season both sides with all the spices.
Move the potato slices to a vegetable grilling tray. ( See the "Que Tips" page.
Arrange the slices in a single layer. Make sure none are overlapping.

Smoking:
Preheat the smoker to 225 degrees.
Place the grilling sheet with potatoes in the smoker for approximately 45 minutes.
Times will vary depending on the size of slices, amount of moisture in the potatoes, etc..
Start checking for doneness at around 30 minutes so not to overcook and dry them out.
Potatoes are done when fork tender.
Brush with melted butter and serve.
