Our Texas Blend Brisket Booster recipe is based on the traditional, bold flavors of true Texas BBQ. The ingredients are simple, but the secret is in the texture. It is important to use the exact ingredients above to insure the precise size and consistency of each spice in order to add exactly the right amount flavor and balance.  

We suggest the trimmed brisket be dried and lightly coated with a bonder like vegetable or canola oil. PaPa’s Brisket Booster should be applied liberally but not too heavy to the entire brisket. Wrap the brisket tightly with plastic wrap or foil and place in the refrigerator for a least 3 hours but overnight is preferable.

Note:
We have a special burr type grinder that has a 24 grind setting that we use specifically for this recipe. Below are directions that you can use if you don't have an adjustable burr grinder.

Ingredients:
7) TBS. Kosher Salt
7) TBS. Restaurant Grind Black Pepper
2) TBS. Minced Garlic
Makes 16 TBS. total (1 Cup)

Directions:
The most important part of this recipe is to start with exactly the type of spices listed above. You cannot use regular table salt, sea salt, regular ground black pepper, garlic powder, etc..
In a medium bowl, combine all the ingredients.
Pour ingredients into a 24 mesh wire strainer placed over a clean bowl.
Using the back of a spoon, gently rub the spices until they just pass through the strainer.
Try not to mash the pieces smaller than the 24 mesh holes. The mixture should be rather course when done with all the spices being as much as possible the same size.
