Outlaw Loaded Potato Salad

If you like potato salad and you like a fully loaded baked potato, you are going to love this recipe. All the compliments of a big helping of potato salad combined with all the flavor of a loaded baked potato. This recipe is normaly served cold like regular potato salad, but I also like to bump a serving in the microwave for that warm, fresh cooked baked potato taste. You will never look at Potato Salad the same way again.

Ingredients:
3 lbs. Small Red Potatoes (Cubed about 1 inch. Generally the skin is left on with this recipe but you can peel the potatoes if prefered)
1 tsp. Salt
4 oz. Shredded Cheddar Cheese
12 Strips Cooked Bacon (diced)
1 bunch Green Onions (diced)
1 cup Sour Cream
1/2 cup Mayonnaise

Directions:
Place cubed potatoes in a large pot and add water to cover.
Add salt.
Boil until fork tender. Don't over cook, your not making mashed potatoes.
Drain and rinse potatoes.
Place potatoes in large bowl.
Add cheese, bacon, green onions, sour cream and mayonnaise.
Salt and Pepper to taste
Stir until well mixed but don't mash the potatoes.
Refrigerate until ready to serve.
