Ingredients:
4 Large Baking Potatoes
8 Slices of Bacon
1 Cup Sour Cream
1/2 Cup Milk
4 Tablespoons of Butter
1/2 Teaspoon Salt
1/2 Teaspoon of Black Pepper
1 Cup Cheddar Cheese (Shredded and Divided in half)
8 Green Onions (Diced and Divided
in half)
Preparation:
Preheat oven to 350 degrees.
Bake
the
potatoes for 1 hour.
Meanwhile, place
the
bacon in a large, deep skillet.
Cook over medium high heat until evenly brown.
Let
the
bacon cool, then crumble and set aside.
When
the
potatoes are done allow them to cool for 10 minutes.
Slice
the
potatoes in half lengthwise and scoop the flesh into a large bowl,
"Save
The
Skins".
To the potato flesh, add
the
sour cream, milk, butter, salt, black pepper, 1/2 cup
of
the
cheese and 1/2 the green onions.
Mix with an electric mixer until well blended and creamy.
Spoon the mixture into the potato skins.
Top each with
the
remaining cheese.
Return to
the
oven just until
the
cheese starts to melt.
Top each one with
the
remaining green onions and bacon. You can add a spoon of sour
cream on top as well if you like (see photo).
Serve hot.
