Outlaw Smoked Pork Tenderloin
Ingredients:
One or more Pork Tenderloins
Sea Salt
Black Pepper
Garlic Powder
Honey
Apple Juice
Brown Sugar
Recommended Wood:
Apple
Preparation:
Trim
the
loin of excess fat and silver skin.
Coat with Honey.
Sprinkle generously with
the
rub spices.
Smoking:
Preheat
the
smoker to 225 degrees.
Place
the
loin directly on
the
smoker rack or on rack in deep pan.
Smoke for 1 hour.
Double wrap
the loin
with foil. (Add apple juice before sealing foil.)
Place
the
loin back in
the
smoker.
Reduce
the
smoker temp. to 225 degrees.
Continue to cook at 225 degrees for an addition 1 ½ to 2 hours.
Check internal temperature at 1 ½ hours.
Done internal temperature of 145 to 150 degrees. Important: Do Not Go Over
150 degrees.
Leave wrapped and let rest for at least 30 minutes.
Serving:
Can be served many ways.
