Ingredients:
Prime Rib Roast
Brown Sugar
Sea Salt
Black Pepper
Paprika
Garlic Powder
Onion Powder
Rub:
Brown Sugar
Sea Salt
Black Pepper
Paprika
Garlic Powder
Onion Powder
Recommended Wood:
Apple or
Pecan
Preparation:
Trim excess fat from Roast.
Combine all ingredients for the rub.
Lay the roast on wide foil.
Apply rub generously over the entire roast.
Wrap in foil and let stand in refrigerator for at least 3 hours to
overnight.
Smoking Directions:
Preheat the smoker to 275 degrees.
Take the roast out of refrigerator and let it stand for 30-60 minutes to reach room
temperature.
Remove the roast from foil and place on a smoker rack or on a rack in a deep pan
and smoke for
2 hours at 275 degrees.
Remove the roast from the smoker and double wrap with foil. Add liquid (apple juice)
inside foil before sealing if
needed.
Reduce smoker temperature to 250 degrees.
Return wrapped roast to smoker or oven and cook for an additional 3 to 4
hours.
Internal done temperature 145 degrees.
Let rest 30 minutes.
Slice and serve.
