Note: Peaches may be substituted with almost any type of fruit. Blackberries, blueberries, apples and cherries are some common fruits that make great cobblers. When using blueberries or blackberries, put the berries in a bowl and mix in about a 1/2 cup of sugar to sweeten the berries before adding them to the cobbler.

Ingredients: 
1 Cup All Purpose Flour
1 Cup Of Sugar

1 Cup Of Milk

2 Eggs

2 Teaspoons Pure Vanilla Extract

2 Tablespoons Baking Powder

4 15 oz. Cans (about 7 or 8 cups) of Sliced Peaches
(Or fruit of choice)
1 Stick Butter


Preparation:
In a 9x13 pan (or close) place the whole stick of butter in the pan and place in the oven. 
Turn the oven to 350 degrees and let it preheat while the butter melts.
When the butter has melted remove the pan from the oven to prevent burning.
In a large bowl beat
the eggs lightly with an electric mixer.
 
Add the flour, sugar, and milk.
Mix until combined.
Add
the vanilla and baking powder and mix on medium speed for about 1 minute or until the ingredients are blended well.
Pour
the batter evenly into the pan with the butter,
DO NOT STIR, if necessary just rock the pan a little to even out.
Pour the peaches (or other fruit) into the empty batter bowl.
 
With a large cooking spoon, spoon out peaches letting most, not all, of the juice drain back into the bowl.
 
Start in one corner and GENTLY lay the peaches into the batter.
Continue laying the peaches in the batter until evenly distributed through
the entire pan and all peaches are used.
  
DO NOT STIR OR SHAKE THE PAN!
If you mix or stir the batter with the fruit or butter, the batter will not rise. Everything will blend together as it cooks.

Cooking:
Place the pan in the oven and bake about 35 to 45 min. until the top is dark golden brown.
Remove from the oven and let cobbler stand for at least 15 minutes to set up.


Best served warm with a big scoop of Vanilla Ice Cream on the side.
